Vanilla Custard Slice

If there is one cake I can not pass up, it is the Custard Square, otherwise known as Vanilla Slice. With the wonderful result from cooking custard in a steam oven I felt sure I could easily make myself a batch at home relatively easily and I was right. 

 

You can change the flavouring of the icing to whatever you wish, by replacing the lemon juice with passion fruit or cocoa or raspberries.  This recipe makes 5 pieces, but if you double the recipe you could make this in a 20cm cake tin for more custardy delight!


2 eggs

1 egg yolk

3 T caster sugar

2 t vanilla extract

2 1/2 T cornflour

1 cup cream

1/2 cup milk

1 sheet puff pastry ( use butter puff for a nicer result but regular puff will do)

ICING

1 1/2 cups icing sugar

20gms butter, melted

3-4 T lemon juice
