Italian Apple and LImoncello Cake

This is a really easy cake to make and it results in an impressively deep and light cake that actually improves over a few days as well. You can swap out the limoncello for other liquids, alcoholic or not but I wanted that intense lemon flavour to permeate. Rum with added vanilla would also work well 

  • 1/3 cup limoncello or other liquid 
  • 4 apples, peeled and sliced
  • 4 eggs
  • 1 cup caster sugar
  • Zest from one lemon 
  • 1 cup of mild flavoured vegetable oil such as rice bran or sunflower 
  • 1/2 t vanilla extract (if not using lemon increase this to 1tspn)
  • 300g plain flour
  • 1/2 t salt
  • 2tspn baking powder
  • 2 T raw sugar
