Grilled Eggplant with Peanut Sauce

This is so delicious, and moreish that you will find you need to cook far more than you think you will eat. It can replace meat for a great vegetarian meal served with a salad.  I used baby eggplant which take around 30 minutes to cook. If you use large eggplant make sure you cook them till they are completely gooey and the bouncy spongy texture is gone. 


  • 4 baby  or small eggplant or 2 large eggplants 
  • Olive Oil
  • Salt and pepper 
  • 2 heaped tablespoons of peanut butter 
  • 2 T soy sauce
  • 2 T mirin
  • 2 T sesame oil
  • 2 T lime juice
  • 1/2 tspn chilli flakes
  • Chopped parsely or coriander
  • Sesame Seeds
