Citrus Herb Chicken Dinner

I love all in one pot dinners and this one is really delicious. You can use any vegetables you like, swap out the broccoli for cauliflour, beans, for peas. This recipe is very flexible.

For even more flavour marinate the chicken in the oil mixture for an hour or more before cooking, but if you are in a hurry, just pour it over the chicken and cook.

If you dont have a steam oven then cover the dish for the first half an hour of cooking to keep the moisture in. 

1/4 cup olive oil

3 cloves of garlic , minced

2 T Honey

2 Lemons- one juiced, one cut into slices

2 Oranges - one juiced and one cut into slices

1 T Moroccan Spice

1 T Tuscan Spice or Dried mixed herbs

¼ t chili flakes

8-10 chicken thighs

1 medium onion cut into 8 wedges

500 gms baby potatoes or larger potatoes cut into 4cm chunks

1 head broccoli chopped into florets

3 carrots cut into chunks

150gms green beans
