1/4 cup olive oil
3 cloves of garlic , minced
2 T Honey
2 Lemons- one juiced, one cut into slices
2 Oranges - one juiced and one cut into slices
1 T Moroccan Spice
1 T Tuscan Spice or Dried mixed herbs
¼ t chili flakes
8-10 chicken thighs
1 medium onion cut into 8 wedges
500 gms baby potatoes or larger potatoes cut into 4cm chunks
1 head broccoli chopped into florets
3 carrots cut into chunks
150gms green beans
Preheat Oven to 210C Bake or Steam Combination with high humidity
In a bowl mix oil, garlic lemon and orange juice, herbs and spices .
Place chicken on one side of a deep roasting dish and pour oil mixture over chicken reserving 2 T for potatoes., Turn chicken to coat, finishing with chicken skin side up . Add Onions and carrots
Toss potatoes in remaining oil mixture and add to the other side of the pan
Bake for 35 minutes , then add brocoli and beans to pan and cook another 15 minutes or until chicken is cooked and juices run clear.
