Cherry Clafoutis

This is such a simple and adaptable dessert. If I had to compare the texture to any other dessert I would say it was similar to a very light bread and butter pudding, but so much quicker and easier to put together. 


When making this one, the most tiresome part was stoning the cherries!. You can swap cherries for any other fruit you desire, raspberries and blueberries would be wonderful, chopped up summer stone fruit works equally as well .


I used a blender to mix the batter ingredients - it saved even more time but you could beat it in a bowl just as easily.


3 large eggs

 1 cup milk

 1/3 cup sugar

 20 gm butter, melted

 1/2 cup flour 

 1 tspn vanilla essense

 2 cups (approx) halved and stoned cherries
